If you are trying to eat healthy, it can be a challenge to find tasty and satisfying Mexican food.

Deep fryed foods and lard (animal fat) is present in many authentic Mexican dishes. This tried and true family recipe is a healthy alternative to those higher fat options. These tacos are healthy, and low fat yet, they are high in flavor.

The salsa recipe below can be used for more than just these tacos. The Super Easy Salsa recipe is a healthy and tasty recipe that can be easily personalized to personal tastes.

Super Healthy Tacos

Serves four

1 lb ground chicken or turkey

Chili powder (to taste)

Salt (to taste)

Pepper (to taste)

8 Corn tortillas

spray olive or canola oil

cheddar cheese

shredded lettuce

1 tomato diced

1 diced sweet onion (optional)

Salsa (recipe below)

Directions:

Brown the ground chicken or turkey in a frying pan over medium-high heat. Add chili powder, salt and pepper to taste.

Spray each corn tortilla with oil.

Heat a frying pan to medium-high heat. Cook each tortilla until it is soft and has a few light brown spots.

Fill each taco with meat, cheese, lettuce, tomatoes, onion and salsa.

Serving suggestions

These tacos can be served buffet style so each family member can make the custom taco they want.

Try adding a dollop of plain yogurt or low fat sour cream.

Add sliced avocados.

For a vegetarian dish use refried beans. Check the label and make sure there is no lard (animal fat) added.

To make an easy “crock pot” style meal put chicken breasts, chili powder, salt and pepper in a crock pot on high for about 4 hours or low for 6 to 8 hours. Shred chicken with a fork before serving.

For tostadas spray each tortilla with oil and bake on a cookie sheet in the oven at 400 degrees for about 10 minutes. This will make the tortillas flat and crispy.

Super Easy Salsa

Salsa is a healthy, delicious and versatile condiment. Some salsa recipes or over complicated. This salsa recipe is simple, fresh and tasty.

1 28 oz can crushed tomatoes

1 teaspoon of garlic powder

1 teaspoon of oregano

1 tsp red pepper or to taste

Salt

Pepper

1 onion finely chopped

Directions:

Take first 5 ingredients and put in a blender or food processor. Blend being careful not to let the mixture get frothy. Add the finely chopped onion.

Tips and serving suggestions

Add cilantro for a fresher flavor, if desired.

Add canned green chilies for a southwestern twist.

Try one or two bunches of thinly sliced scallions in the place of the onion.

Try dicing a large shallot in the place of the onion.

What is so much healthier about these tacos than regular tacos?

Chicken or turkey is usually lower in saturated fat than beef.

Lettuce is chock full of cancer preventing chlorophyll.

Corn tortillas are lower in calories than flour tortillas.

Onions and cheese promote bone health.

Using a healthy cooking oil spray prevents many health issues like high cholesterol.

Cutting the fat and calories by not deep frying the tortilla.
