1 lb ground chicken or turkey

8 Corn tortillas

1 diced sweet onion (optional)

Brown the ground chicken or turkey in a frying pan over medium-high heat. Add chili powder, salt and pepper to taste.
Spray each corn tortilla with oil.
Heat a frying pan to medium-high heat. Cook each tortilla until it is soft and has a few light brown spots.
Fill each taco with meat, cheese, lettuce, tomatoes, onion and salsa.
These tacos can be served buffet style so each family member can make the custom taco they want.
Try adding a dollop of plain yogurt or low fat sour cream.

For a vegetarian dish use refried beans. Check the label and make sure there is no lard (animal fat) added.
To make an easy “crock pot” style meal put chicken breasts, chili powder, salt and pepper in a crock pot on high for about 4 hours or low for 6 to 8 hours. Shred chicken with a fork before serving.

1 teaspoon of garlic powder
1 teaspoon of oregano

Take first 5 ingredients and put in a blender or food processor. Blend being careful not to let the mixture get frothy. Add the finely chopped onion.
Add cilantro for a fresher flavor, if desired.
Add canned green chilies for a southwestern twist.
